Ingredients - 2 servings
5 eggs
100ml milk
100g cherry tomatoes
1 pepper (red)
1 avocado
2 spring onions
100g chorizo
100g mozzarella cheese
10g parsley
1 teaspoon oregano (dried)
Nutmeg
Butter for frying
Salt and pepper
Gear
Cutting board
Knife
Beater
Large mixing bowl
Large Teflon pan with lid
Step 1/4
Halve the tomatoes and cut the peppers and avocados into 4 edges. Cut chorizo, spring onion and mozzarella into large pieces and chop the parsley.
Step 2/4
Whisk the eggs and whisk in the milk. Add oregano, half of the parsley, nutmeg and salt and pepper to taste.
Step 3/4
Melt the butter in the Teflon pan over medium heat. Fry the chorizo for 2 minutes. Add peppers and fry for 2 minutes longer before lowering the heat to medium low. Add the tomatoes and then add the egg mixture. Cook the omelette for 4 minutes with the lid on.
Step 4/4
As soon as the omelette is half cooked, spread the avocado, mozzarella and spring onion over it. Replace the lid and let the omelette cook for another 2 minutes.
Serve and enjoy!
